Mindful Indulgence + Moringa Lemon Bliss Superfood Ice Cream

Summer is right around the corner which means one thing: ice cream season is about to go into full effect. While there is no argument that ice cream is one of the most delicious ways to cool down, it’s usually not the most healthful. If we’re not mindful about our indulgences, we may end up ingesting an abundance of sugar and calories, with little of the nutrients our active bodies crave.

The solution? A 100% plant based, refined sugar-free Moringa Lemon Bliss Superfood Ice Cream! This recipe nourishes both body and soul with clean, nutrient dense, body-loving ingredients like coconut and moringa, that rich and creamy texture you’d expect from ice cream, and even a drizzle of Rawmio’s decadent Chocolate Coconut Spread for the perfect chocolate shell-like finish.

The flavor? Think matcha ice cream with real vanilla bean and a hint of lemon.

Not convinced that something this indulgent looking could be healthful? We’ll let you decide with an insider’s look at the health benefits of each ingredient:

Moringa, also known as “miracle tree” or “tree of life” is a superfood green powder derived from the leaves of the Moringa Oleifera tree. It has been used in ancient Ayurvedic medicine for its therapeutic properties, and has been said to treat a myriad of ailments ranging from poor digestion, ulcers, kidney stones, suppressed immunity, low energy, and even mood disorders. It is absolutely packed with a diverse array of nutrients, most notably high levels of Vitamin A, Vitamin C, calcium, iron, magnesium, potassium, antioxidants, amino acids, and chlorophyll. Moringa has a bitter, grassy, and pungent flavor with a bit of a horseradish-like bite, so blending it into something delicious like ice cream is a great way to ingest it.

The base ingredient of our recipe – coconut – is an incredible source of healthy fats called medium chain triglycerides. These special fats are very easy for the body to burn as energy, and actually help boost the metabolism. Coconut also contains both capric and caprylic acids, which are potent anti-viral, anti-fungal, and anti-bacterial agents, lending a helping hand to our immune systems.

Cacao, the base ingredient of all Rawmio’s stone ground raw chocolate treats, is one of the planet’s richest sources of antioxidants and cell-protecting flavonols. Antioxidants help prevent premature aging, and help prevent inflammation within the body. Cacao is also the planet’s richest food source of magnesium, which helps regulate digestion, improves muscle flexibility, and prevents muscle cramping. Great for yogis and yoginis.

Avocado is one of the best sources of healthy mono-unsaturated fats, necessary for the health of our hearts, nerves, hormones, and skin. It is also a rich source of Vitamin E, one of the most potent antioxidants, as well as potassium for electrolyte balance  – especially important before and after a yoga sweat sesh.

windy city organics moringa lemon bliss ice creamRecipe

1 can organic coconut milk (we used Native Harvest brand with BPA-free lining)

1 tsp moringa powder

1/8 large, or 1/4 small avocado

2 Tbs raw organic honey (use maple syrup or agave if vegan)

1/2 Tahitian vanilla bean, slice open and remove beans by scraping*

1 tsp vanilla extract

1 tsp lemon zest

1 pinch pink salt

For drizzling: Rawmio Chocolate Coconut Spread, gently melted

  1. Make your ice cream base by taking all ingredients above and blending until smooth and creamy.
  2. Pour base into several ice cube trays, not filling the tray to the very top for easier blending once frozen.
  3. Once frozen (about 4 hours, or simply freeze overnight), remove and add to a food processor or blender and blend until smooth. Try not to add any liquid. You can let the ice cream cubes thaw out just a bit prior to blending to make it easier. For scoop-able ice cream that will sit in a cone, you may need to refreeze in a container once blended to firm it back up.

This recipe also works perfectly with matcha green tea powder. Simply sub that in for the moringa, or do a 50/50 split with 1/2 tsp each.

Leftovers can be stores in the freezer in a freezer-safe container, although it will need to be thawed a bit prior to eating.

*Vanilla beans are available in the spice section of many health foods stores. If unavailable, simply sub in another tsp of vanilla extract.
